DAIRYING

CHEESE MANUFACTURE.

STANDARDISED PRODUCT.

Mr F. H. Anderson draws our attention to the concluding paragraph of a report in Saturday's New Zealand Herald on the conference at Palmcrston North wherein it was stated that '' Professor Riddct, of Massey College, and Mr Veale, of the Hawera Laboratory, pointed out that the use of too much skim milk affected the flavour of cheese.''

Mr Anderson stated that, neither of the two gentlemen made this statement, but Mr Veale did say that it was quite probable the aeration of the milk in separating might affect the cheese, but at the moment he was not prepared to say it was so.
