SUGAR OF MILK.
The proposal to install a sugar nl milk plant at. tlio Foalhi rston dairy factory is of considerable importance to the Wairarapa. Sugar of milk is of great commercial value as a diet for infants. Already one or more plants have been installed in the Dominion, and the results have been eminently successful. The question arises as to whether there, is a. wide enough market to warrant the industry being established on a large soale. That question cam only be decided -by a. reference, to the .world's statistics. Presumably those who are moving in the matter in the Featherstnn district have fortified themselves with data, regarding this aspect of the question. Thousands of pounds arc being lost every year through the failure to properly utilise the bi-pro-ducts of the farm. Any movement, therefore, in the direction of ■tunning these products to the fullest account, is deserving of the utmost encouragement.
