OUR DAIRYING INDUSTRY.
In April of last year there were in operation in this colony 74 cheese or butter factories, double the number that existed in 1886. There were in all 269 hands employed — 218 males and 51 females. Tfcago stood at the top of the list as to the number of factories, with 26, followed by Auckland with 22, Taranaki with 11, Wellington 10, Canterbury 4, Hawke's Bay 1. The amount paid in wages in IS9O totalled nearly L 15,000. Sixty of these factories were driven by steam, 6 by water, 5 by hand, 2 by horse, and Iby gas. The following figures show the value of material used in 1890, also the approximate value of land, buildings, and machinery and plant : —
