BALANCED DIET.
Meals for Five for 38s a Week. (Special to the ” Star.”) NEW YORK, June 23. How a family of five can live on* “ a balanced diet ” for 38s a week is explained by Dr Grace Macleod, Professor of Nutrition, Columbia University. Such a family would consist of father, mother and three children aged fifteen, nine and five. The menu, says the professor, contains the essential protein, calcium, phosphorus, iron and vitamins. Typical day’s meals are: Breakfast.—Cereal with bananas, milk, sugar, toast and butter. A glass of milk for the children, coffee for the parents. Luncheon.—Cheese and macaroni, stewed tomatoes, bread and butter, a glass of milk for all. Dinner.—Liver, potatoes, cabbage or carrot, salad, gingerbread with whipped milk, coffee for parents, milk for children. Speaking of such a menu, Professor Macleod says: “It is wholesome and adequate, although containing no fancy foods. With care in buying the cost could be reduced." The professor has further devised daily meals costing two shillings, designed for students of both sexes. A man’s menu with 3000 calories is: Breakfast: A pint of milk, quarter bananas. Luncheon: Milk, whole wheat raised bread, butter, macaroni cheese, buttered carrots. Supper: Milk, biscuits, raisins, an orange. The menu for girls is: Breakfast: Milk, banana, a biscuit, a teaspoon of sugar, a teaspoon of cod-liver oil. Luncheon: Vegetable soup, whole wheat bread, an egg, watercress salad, milk. Supper: Milk flavoured with chocolate, whole wheat bread, an orange. American prices are often half as much again as English.
