To-Day’s Recipe.
41b flour. Small pinch of salt. 4oz butter. 4oz yeast. Half teaspoonful caster sugar. 1 egg. Quarter-pint warm milk. Sieve the warmed flour with the salt, and with the tips of the fingers roughly rub in the butter. Beat the egg (putting aside a little for brushing over the rolls), add the milk and p ar it over the yeast, which you have creamed with the sugar. Make a 'well in the flour, pour in the liquid and beat well together, and let the dough rise, covered with a damp cloth, for about an hour. Cut it into twelve pieces, knead each into a ball, shaping it round the sides, and cut crosswise on top. Let them stand near the fire for ten minutes, brush over with the beaten egg left over, and bake in the oven till golden coloured, about 10 or 12 minutes. Ii .. J
