Demonstration on Cooking Cheese Dishes. The art of cooking many delicious cheese dishes was demonstrated by Miss S. Powell, assisted by Miss j Gillespie, at a meeting of the Home Economics Association, held in the M.E.D. rooms last evening. It had been said, stated Miss Powell, that there were 350 different varieties of cheese in the world. Cheddar being the most common. Besides being a valuable industry of New Zealand, cheese Ss also of benefit as a foodstuff. Many people believed that cheese was indigestible, the idea originating from the fact that in years gone by the only way in which cheese was consumed was after a large meal. "However, in later years, cheese was found to contain beneficial properties, such as proteins, and should take its rational place in the normal diet. The way of cooking, of course, was a great factor, and like meat, another food rich in proteins, it should be cooked very slowly. Among the recipes given by Miss Powell were luncheon dishes such as baked fish with cheese and augratin vegetables. Devilled eggs and cheese bonbons also made delicious savouries.
