Address your envelope to The Chef, care of Lady Editor, “ Star ” Office, Christchurch, si trl Si Banana Puffs. Ingredients: Light pastry, half a banana for-«each puff, lemon juice, master sugar. Roll out the pastry and cut into squares. On each square put a quarter of a banana, sprinkle with lemon juice and caster sugar, put another quarter on it, and sprinkle this also. Fold the pastry over, wetting the edges where they join. Brush over with a little .egg or milk, sprinkle lightly with sugar, and bake in a moderate oven for about fifteen minutes.—Mrs F. 8., Riccarton. Maids of Honour. Ingredients: Puff pastry, half a lemon, two tablespoonfuls of caster sugar, one tablespoonful of breadcrumbs, a piece of butter the size of a waluut, one egg. Take a lump of sugar and rub it over the lemon rind. Crush it fine, and put into a small stewpan with the caster sugar, strained juice of half a lemon and the butter. Heat slowly until the sugar has dissolved and the butter melted. Then add the beaten egg. Set the stewpan at the side of the stove, add the breadcrumbs, and stir occasionally over gentle heat until it is a thick mixture. Line patty tins with puff pastry (pricked with a fork) and three-parts fill with the mixture. Bake in a hot oven.—The Chef.
