Orange and Lemon Creams.—Make some fondant, using all lemon juice or orange juice in place of the water, and adding the finely grated rind of half a lemon or orange. Form into fondants and dust with caster sugar. Neapolitans. —Make some fondant and some marzipan, colour half the latter rose-pink and the remainder pale green or mauve. Roll out the pastes on a sugared board. On a layer of fondant place one colour marzipan, then more fondant, the other coloured marizipan next and fondant on the top. Cut in small pieces with a sharp knife and roll in caster sugar before drying.
