(Contributed by “Star" Readers.) BABOOTY. Chop cold meat fine, an equal quantity of bread (which soak in water). Mix together. Add one finely chopped onion, salt, two teaspoons curry powder, 2oz butter and gavy or milk to moisten it. Put in a piedish, break an egg over it and bake half an hour. BOUGHNUTS. 11b Sour, lb sugar, pinch salt, small teaspoon C. of soda. -Mix all together with buttermilk (sour milk will do), cut in rounds and boil in fat. LEMON JAM. Five lemons, four quarts water, olb sugar. Cut lemons into pieces, put in four quarts of water, and let it stand two days. Then boil it up for one hour, and when nearly cold add the sugar. Let stand one day more. Then boil it up until it is him from half to two hours. LEMON PUDDING. Mix in a basin Jib of flour, with Jib of sugar, Jib of breadcrumbs. Jib of finely minced beef suet, Jib of Valencia raisins stoned, quarter of a tcaspoonful of baking soda with the lumps pressed out, and a pinch of salt. Pour into a greased pudding basin, cover with a greased paper, and steam for two hours in boiling water of about two inches in depth. Turn out and servo with lemon sauce. LEMON SAUCE. Mix a largo tea spoonful of cornflour with a, teacupful of water, a tablespoonful of sugar- and sufficient lemon juice to flavour - —say, the juice of a small half of a lemon. Colour with a little red currant Stir these ingredients until they boil, and then pour round the pudding. LEMON FEATHER CAKE. Boat to a light cream 2oz of butter with 4.0z of fine sugar. Mix on a plate 6oz of flour with half a tcaspoonful of baking powder and. the grated rind of a lemon. To the beaten cream add alternately, in small quantities, the yolks of three eggs mixed with two tablespoonfuls of milk and the mixed dry ingredients. When all is well beaten, beat the whites to a stiff froth and mix them with the whole. Bake the cake for a. quarter of an horn- in a prepared sandwich tin. When ready turn out, and spit and spread with jam when the cake is cool.
