A- DTJNEDIN PROTEST. [From Our Correspondent.] DTJNEDIN, May 15. All persons who make or eat cakes are interested in a i>rotest that has originated in Ofcago as to the new regulations under the Sale of Food and Dings Act. These regulations are now in force, and one clause practically prohibits confectioners from using yolks and albumen. Messrs A. Moritzson and Co., who import quantities cr these goods and supply a guarantee of purity, have addressed a letter to the Hon • R. H. Rhodes, in which they say:—"Paragraph 30 allows only fresh eggs to be used. It does not say whether confectioners are to be allowed to use preserved eggs. If they are not, they may just as well close up, as they cannot get fresh eggs during the winter months. Wo further notice that the yolks of eggs and dry albumen are not allowed to be used. " If the regulations are not modified in respect to these importations, the price of eggs in New Zeoland will rise, at any rate, 3d per dozen, and perhaps more. We are perfectly sure it is not the intention of the Government to raise the price of food, especially the price of eggs; we know that you wish to increase the breeding of poultry and encourage the export of eggs, but it will be another fifteen or twenty years before we can bo at all successful in shipping eggs away in large quantities. The eggs which hnvo been shipped did not pay, notwithstanding the paragraphs in tho papers. Wo feel suro that after mature consideration you will not enforce the regulation, as it appears at present Iho time is not yet here for f>iu'h legislation."
