FROZEN SALMON.

An interesting experiment (says an English contemporory) has been tried by tho Hudson's Bay Company. Last year the Company purchased the steamer Diana, of about 200 tons, had her fitted by tho Bell-Ooleman Mechanical Refrigerating Com* any, of Glasgow, with a refrigerator, and the vessel hae brought from Labrador fully 30 tons of salmon in a frozen state. Specimen fish have been presented t-» Her .Majesty, the Prince of Wales, and other psisons of distinction, who havo expressed a decidedly favourable opinion upon the quality of the salmon after being thawed in cold water. The fish must bo steeped in cold water for six or eight h ure, or even longer. Plunged then into boiling water, and cooked in the ordinary manner, the fish is, in fact, firm, well-looking, and of excellent flavour. The fact that frozen salmon may be procured in good condition, whether the article is in season or not, certainly deserves public attention. It is believed that, in the event of there being a demand for thiß frozen salmon, a large quantity could be obtained from Labrador every season, and sold during the winter monthß at reasonable rates. At present, the salmon is being sold in small quantities at ls 3d per lb, while in retail shops prices range aB high as 2s and 2s 6d, at which but a limited demand prevails. We are informed thot tho expense of keeping the salmon frozen for several months is comparatively small. On that account tbo tiudson's Bay Oompany can no doubt affoul to wait for a market either here or in Australia, to which it is expected that consignments will be made by steamers fitted with refrigerators.^ Thus the modern opplication of the refrigerating process promises to secure salmon all the year i„und for consumption both at Home and in the Colonies; and it is of special interest to London households to know that regular m plies of this really oppstising fool from a British Colony can be boughtata moderate price atatime when salmon caught in home waters is not in season.
