PUKE MILK.

(To the Editor of the Evening Star.)

Sir,—Lite Mr Plimsoll, I admit mj mistake but retract no facts ; " Anxious Enquirer's " remarks only make the inconsistencies of " Fair Play's " statements the more glaring, for he offers mo £20 for a cow that will give from 20 to 25 quarts of milk per day, yet he gave £12 for one that gives 6i quarts per day, and pays 2s (3d per day for its fodder. My whole arguments go to show the better the cow the- more payable, for it costs more.to keep some cows that will giro ho more than Gh quarts than it will others that give 20- to 25, and that a man requires capital to start' in a dairy here as well as elsewhere, and it is no use trying to make a living out of cows even at §d per quart if such cows-are bought as " Fair Play " and ■■ Anxious Enquirer " want to make me believe are. You will observe I have admitted nothing of what the dairymen have advanced as a reason for raising the price of milk ; I have been willing to be convinced if they would only shew what they actually spend in keep; but facts are facts, and I have no doubt some of your readers may know some milkmen who have bought freeholds out of milk sold at Gd per quart, and have their living and labour all paid out of it; besides, Mr Alley offers to sell milk at 3d per quart at Hikutaia, and surely men who have any land cultivated it need not cost them any more with proper cows than 4d per quart here. I have asked some questions in a former letter which % should bo grateful if " Anxious Enquirer"'would answer, for if I am wrong I am perfectly willing to acknowledge it, but if I havo not proven jnen can sell m;lk at 4d per per quart, neither " Anxious Enquirer "■ or ?* JFaie Play," have shown any just cause for spying they cannot sell milk under Sd a quart with a profit; had they confined themselves to raising the price of milk to 8d a quart without trying to deceive, there would have been no notice taken of it by

Enquires.

P. S. You will observe that " Anxious Emjuircr " has not given uae fair play, uor

an answer. He omitted, thelprofit of a cow that gives 1.3 quarts of milk at Bd, and how soon he would have his money returned. I trust he will inform me what interest he expects for his money.
