SAVOURf TARTS
X Three small carrots, two *:* a ounces butter, three yolks of * ❖ eggs and white of one, quarter ❖ pint of milk or vegetable stock, £ .j. one tablespoon tomato sauce, one <• tablespoon cream, pepper, sa-it * and a little cayenne. Scrape * £ carrots and shred them very * ❖ finely. Cook them with the * butter for four minutes, taking £ ►!< care not to let them brown, then J add the milk or stock and season- * £ ing and cook very gently till £ ❖ carrot is cooked enough to rub ❖ J through a sieve.
