CONCENTRATE IN STOUT
NEW USE FOR BLUFF OYSTERS The forerunner of regular shipments of concentrate from Foveaux Strait oysters is being taken to England by the Remuera, which left Bluff on Tuesday. One of the biggest brewing firms in Britain will use the concentrate, W’hich is in liquid form, for mixing with stout not only to increase the mellowness of the stout, but for medicinal value. The thought of combining oysters with stout occurred to Mr E. Barnes, factory manager at Bluff of Thyrodone Development, Ltd., which .is carrying out the manufacture of the concentrate in New Zealand. Experiments were made by Mr Barnes, in co-operation with the company, before the concentrate was considered to be in the best marketable form. The oyster concentrate was first produced » ! in the form of a powder, but as a result of experience the liquid form was then evolved. For the last 18 months the firm of British brewers which has obtained a contract for the supply’ of the concentrate has been experimenting to perfect the combination of stout and oyster concentrate. The resultant product has been analysed and tested in London by’ the most competent authorities in the world. They have proved that it is free from all bacteria of a harmful nature. Medical men of Harley street have given support to the medicinal value of oyster stout. The firm of British brewers which intends to market the product has a capital of £3.000.000 and it is the intention of the firm to spend a minimum of £20.000 in initial publicity in Britain. The product will be marketed from August onwards and arrangements have been made for a display at the office of the High Commissioner for New Zealand. This product has gained an increasing market in New Zealand during the last nine months. When the concentrate is mixed with stout it is equal to one oyster a glass. One of the world's leading firms has been making experiments for some time with a view to using oyster concentrate for a tonic wine. It is reported that the firm has met with encouraging success.
