CARROTS FOR BEAUTY
THEY WILL CONDITION THE SKIN
Generously included in the diet the homeiy carrot is reputed to be one of the surest aids to a good complexion.
A world-famous doctor has said: “The carrot is the finest vegetable for the complexion: its continued addition to a dietary in which there is plenty of fruit, milk, corn and oil, will condition the skin toward the texture of peach tinted with sun-painted carmine."
Young carrots for table should not be scraped—just wiped with a damp cloth. Cook for about half-an-hour, or until tender, in quickly-boiling water, to which you have added a teaspoonful
of sugar. Then drain, toss in a little butter and sprinkle with chopped parsley. Older carrots will need some scraping before they are cooked, but they should always be boiled whole, so as not to lose their flavour; cut them in pieces, if necessary, for the table, but only after they are cooked. Carrots stewed in stock make a nice dish; cook till tender, take out the carrots and keep them hot,, thicken the stock with flour to a paste -with cold stock or water before adding the hot liquid; cook for a few minutes, stirring all the time; if liked, a little Bovril or meat extract can be added. Pour the thick sauce over the carrots and serve in a hot dish. Cold cooked carrots can be diced and added to any salad, making it more nourishing and beautifying for the complexion; or a small quantity of grated raw carrot may be mixed in lightly. s'. It has been found, by analysis, that carrots contain as valuable food material as the haricot beans, which are rightly prized for their nourishing qualities; in the vegetable garden they have the great advantage of taking up less room than most c*ops. Taken all round, the carrot is one of the best things we can grow.
