Roll out half of the ■ pastry fairly thin and put on a ! cold oven slide (flour the slide ' first), spread fruit over the J pastry, sprinkle with sugar, and ' drop small dabs of butter here I and there over fruit and sugar. ; Sprinkle with water to moisten sugar, roll out the remaining ' pastry and place over all. Press I the edges together, glaze with ' sweetened milk, and bake in a fairly quick oven for about 30 ; minutes. Slide off the oven shelf I on to a cooler, and cut into • fingers as required. When putting i fruit on to pastry leave a margin ’ of about half an inch right round « the edge of the pastry, as this ’ makes pressing the edges togeth- » er easier. ’
