TO-DAY’S RECIPE JELLIED SALMON Drain the liquor from a tin of salmon. Flake the fish and mix thoroughly with i tablespoon of sugar, i tablespoon salt, 31 tablespoons of flour, 1 teaspoon of mustard, pinch of cayenne, 11 teaspoons lemon juice, the yolks of 2 eggs slightly beaten, li tablespoons of melted butter, S cup of cream, i cup of vinegar. Cook this mixture, stirring constantly until it thickens, then strain into It 1 tablespoon gelatine previously softened with 2 tablespoons of cold water and dissolved over boiling water. Fill a mould with the mixture and serve with a white sauce.
