A POT POURRI OF REC IPF S Pumpkin Pie Filling Among the typically winter pies, pumpkin pie should have a prominent place. For a sweet it has an unusual and delicious flavour and the colouring is excellent. Whisk 2 eggs and add i cup sugar. 1 tablespoon of flour, 1 tablespoon of treacle, 1 teaspoon of salt, 1 teaspoon of gihger, J teaspoon of nutmeg, and li cups of milk Combine and add 2 cups of sieved pumpkin pulp.

Pour the mixture into uncooked pastry shells (in tins) and bake at a high temperature for 10 minutes, to cook the edges of the pastry. Then reduce the temperature and leave for 30 mniutes to cook the custard. Short pastry may be used successfully for this pie. Cheese Apple Pie Can be made this way and it’s good. What is apple pie without cheese at the best of times? Slice the required number of apples over the pastry, sprinkle liberally with sugar and a little grated nutmeg. Add a squeeze of lemon juice, cover with finely grated cheese, dab with a little butter, and bake. This pie may be made on a pie plate with a covering layer of pastry. Potato and Spinach Croquettes Mash pot-cooked potatoes thoroughly and beat with a fork. There should be two cups. Add 2 level tablespoons butter, yolks of 2 eggs slightly beaten, and 1 cup finely chopped cooked spinach. Season with salt and pepper. Shape into croquettes, or balls, dip into finely ground dried breadcrumbs, then into egg, and again roll in crumbs, fry in deep fat 385 deg F. till golden brown in colour. Drain thoroughly on absorbent paper. If desired serve cheese sauce.

Cheese Sauce.—Butter, 2 tablespoons; flour, 2 tablespoons; pepper and salt to taste; 1 cup milk. Melt butter, add flour and condiments. Blend thoroughly. Add gradually* Stir constantly and boil 2 minutes. Remove from fire and add onethird cup finely grated tasty cheese. DP not cook, stir till thoroughly blended. Serve piping hot. Bran Ginger Cake Quarter cup butter or shortening, I cup sugar, 1 egg, 1 cup bran, li cUps flour, * teaspoon salt, 1 teaspoon ginger, 1 teaspoon soda, 2 teaspoons cinnamon, cup sour milk, L cup golden syrup. Cream shortening and sugar together. Add the egg, and beat well. Add bran, and mix and sift the dry ingredients, and then combine with first mixture, alternately with the sour milk and syrup. Pour into greased cake tip, a square one perferably, and bake in moderate oven for 30 to 40 minutes. American Lemon Pie There is an acidity and yet a sweetness about lemon filling that appeals to almost everyone. Here is a recipe for an excellent one:—

Add 2 tablespoons cold water to 2i tablespoons of cornflour. Mix and add gradually 1 cup of boiling water, and the rind of one large lemon. Cook 2 minutes. Then add 1 teaspoon of butter and J cup sugar. Remove from the heat, and add 2 egg yolks well beaten, and the juice of a large lemon. Pour into pastry shells. Beat 2 egg whites with a pinch of salt, and fold in 2 tablespoons of sugar. Pile on top of the filling and brown in the oven.
