t STUFFED MARROW t £ One small marrow, Ub fillet £ *:• of veal, very finely minced, 2 ❖ *:* tablespoons grated cheese, 1 egg, *t* »♦. piece of soaked bread the ize * •5* of an egg, salt and pepper, small * *:* pieces of bacon. Cut each end *t* 4 off marrow and remove seeds, f but do not peel. Mix all ingred- £ ients well and stuff marrow. Pur, *:* into a casserole, cover with a »:♦ * sauce and cook gently for an * £ hour or until the marrow is £ 4 tender. The sauce: 1 tablespoon <• *;* butter, onion, little bacon fat. *:* *♦* 1 gill tomato puree, salt and 4 pepper, pinch of sugar, i pint of ♦♦♦ *t‘ stock, little parsley. Melt but- g 4 ter, fry the onion and bacsn fat, 4 * parsley, puree, salt, pepper, sugar * *:* and stock (or water). Bring to £ 4 boil and use as directed above. »:■» When marrow is cooked strain * off sauce, thicken with a dessert- £ 4 spoon of flour, and boil for 5 »:♦ * minutes. Pour the sauce back J £ over the marrow and serve. 4
