PRESERVED EGGS.

To the Editor of the “ Timaru Herald.” Sir,—lt may surprise many of your readers to know that hundreds of our townspeople are being imposed on in having preserved eggs, sold over the counter as fresh. Perhaps the grocer is unaware of the fraud prepetrated upon him, but such is the case. In these times, particularly at this period of the year, it is quite easy to ascertain the real purveyors of fresh eggs, and secure the fresh article, at many cases considerably cheaper than the other one. It certainly behoves ail merchants to see that they are not “double-crossed,” as apparently is goingon, and housewifes will be wise to see that preserves are not mixed with fresh—l am, etc., TRADER.
