Here is one of his recipes: Hachis Parmentier Mince cold boiled beef with about two rashers of bacon, salt, pepper and chopped parsley. Fry in butter three small onions and one shallot chopped fine; when brown, add the minced beef, stir and fry. Add a little stock, and a few drops of Lea & Perrins’ Sauce.
