BBADWHAT PROFEB9O3 BICKERTON£BAYS. [ Copy. ] Canterbury College, Laboratory Dept. ObrMtohurob, April 19tb, 1893. Report on the analyeia of a sample of Bread received from Mb A. Bvdd, Timara. ON examination, the Bread proved to be an Excellent, Sample, well baked and of satisfactory flavour, and at the same time moist and of particularly good keeping quali* ties. The cellular structure was fine, uniform, and evidenced eatiafaptory fermentation. So far as this sample is concerned the Leoonte Malt Bxtraot appears to fill the requirements, of fermentation much better than potatoes. A. W. BIOKERTON, Publio Analyisfe. BUDD* TIMARU PUBLIO NOTIOB.
