SUMMER REFRESHMENTS.

rOUiTO & BOGIE'S marble bar. Miss A. L. Logic, who has been in business for sonic time in Devon Street as a confectioner, has taken into partnership her brother-in-law, Mr. T. Young, late of Douglas, .and the firm will in future bo known as “Young and Logie.” Very extensive have been made to the premises, which are now modelled on the most up-to-date lines. The confectionery trade, which has earned such an excellent reputation during the last few years, will still bo carried on in the front part of the shop, but it is by passing on through a large saloon, in which are many people (for it is Saturday evening and is not this the popular rendezvous on such a night) that the magic lure fast making the place so famous is found. “DU have an apricot soda,” and “A vanilla ice-cream for me,” are two of the orders that are heard, and one realises that this is the fine Marble Bor, where everything that is purest and host in the way of summer refreshments is provided. But lot us first examine the back portion of the promises, and particularly the workshop, where a neat electric motor is busy at work churning what eventually becomes ico-cream. In this room, also, sweets arc manufactured, principally in the winter, when the staff is not so busy serving sodas and ices to thirsty customers. Cleanliness is tho predominant note in the surroundings, and again in tho kitchen, adjoining the saloon. Hero the washing-up is done, and a special point is made of sterilising all tho glasses cvcrv time they are used. The saloon itself has been greatly enlarged, and accommodation is now provided for fifty people. At tho soda fountain (which is another name for tho Marble Bar) many are selecting a beverage from the long list of flavours —peach kola, raspberry, apricot, pineapple, cherry, lemon, vanilla and passion fruit—to mention only a few of the many drinks t that are made from the puro fruit juices. Tho Ice-creams can be obtained in many flavours, and by tho end of this week Mr. Young expects to have the different crushed iruits with which tho icecreams are transformed Into delicious “Sundaes.” In tho hot summer weather which now seems to be with us Young and Logic's shop is undoubtedly an alluring place to visit, and in the coming months an even greater trade is assured than in previous years. Tho management has decided to give ono day's proceeds from tho sale of sodas and ices to the lied Cross bund, and tho day decided on is Saturday next, so that there should bo an extra large attendance at tho Marble Bar.
