ANNUAL RACE MEETING. FIRST DAY. The annual race meeting of the Stratford Club opened yesterday. There was a large attendance —a big increase on that of the corresponding day last year. The weather, however, vyas not at all favourable, a gale swooping across the course during the whole day, much to the discomfort of the visitors. Hus was the only drawback. Coming up the straight, Sylvauia drooped back, and St. Helena and Praefectus were racing bard neck and neck, when Lady Loo came no very fast from tbo back and, passing the leaders a chain fram the post, won by a length, a head dividing second and third. Froni an even dispatch Solus was first in front and lead past the stand, with Shannon Lass, Leathean, and First Mate following in that order. Mallet was last. Tho same order was maintained passing the seven furlong post, and at six furlongs Shannon Lass was moving np. Along the back she was with Solus, the two racing together three or four lengths ahead of tho field. Mallet was showing more speed at throe furlongs. Entering the straight the field had closed up. Then Solus and First Mato made another spurt, and once more a fine race resulted. First Mute winning by a nook, two lengths between second and third. Shannon Lass was fourth, Lethean fifth, and To Puia last. Time, Imin 58sec.

Battonborg) Cake.--Make a Genoese paste as follows;—Take one pound of butter, one pound of castor sugar, twelve eggs, one pound two Ounces of flour, two ounces of cornflour,, , four ounces of ground almonds, and essence of vanilla. Beat .up the butter and sugar, add the eggs, two at a time, boat well, add the essence and mix the flour, the cornflour and almonds to a nice batter, then half of it on a large meat tin; with a sheet of white paper upon it, add a few drops of cochineal to the other half, and beat up and lay it upon another papered tin and bake. When done, strip paper off and leave it to get cold; then lay one piece upon the other and cut in equal parts—square, obling or diamond—then sandwich two together and build up a nice cake, four pieces of white and five pieces of pink. Wrap it in almond paste and decorate top with fondant icing. The Empire Company’s "Elephant’’ Blend Tea at 2s 2d nor lb is just the most appropriate tea to accompany this cake. The "Elephant” Blend possesses all the strong characteristics of the finest Darjeeling teas, and the flavour is not too pronounced, consequently the palate cannot tiro of it.
