Homo by, the Victorian Department of Agriunltnre to tcßfc the value., of " Preaßrvitas." On examination it was' found that in two of the boxes the butter' was in firßl-claß3 condition, and its fine flavour was very noticeable, notwithstanding the heavy baiting ; but in the third box — Robertson's — tbe .butter yvas distinctly goop, the flavour lost, and in fact, although the cases bad been out of the freezing chamber of the chip only a few day3,-wcs already rancid. This report was given by several experts who bad no information regarding the butters or-thsir packages. To avoid any misunderstanding the butters .were submitted to Mr Jacobsen, pf_ the. firm of F. Jacobsen & Go., Thames Chambers, Beer Lane, E.C., for bis opinion, he being a Dane, .and an acknowledged expert. His report dated August; 6th runs thus :— ".The 'P.C and 'JT.F.' we find of fairly good texture , and quality, whereas the box, marked ' Robertson,' is more . tender, slightly sour, and altogether, does not appenr to have stood the voyage as . well .as ■ the other two. 1 ' The chief point in the foregoing is that the P.C. and F.F. butters were treated with abqat 31b8 salt, and 1 J per cent, of Preservitas, the Robertson sample being salted only, and enclosed in a Mountain Ash box.
