Messrs Francis" Forrest & Co., Melbourne;' have' received a report on the three boxes bntterj sent' Homa by, the Victorian Department" o£^ Agriculture tp teßt the Vdlue'" of " PreservitHß." On examination it wbb i found that in two of the boxes the butler was in firat-clasa condition, and its fine flavour was very noticeable, notwithstandiog the hotivy fcaltinp: ; but in the third-box-^-Roberlson's — ihe "batter .-was dis-' tinctly gonej the flavour lost, and in , fact, allboagh the cases had b?en .out of, the freezing chamber of tho ship only" a few driya, was already raricid^ This report 'was given by several-experts wh'ri-had co' information regarding the' butters or th-iirs* packages. To avoid any misunderstanding the; butters were submitted to Mr. Jacbbseb, of .'the Brin of, F. Jacobsen &• Qo; f Thames Chambers, "Beer Lane, E.C.j for his opinion, h6 being a Dane, and an acknowledged expert. His- report dated •August 6lh runs thus :— "The ■* P.O.' and 'JT.F.* we find, of fairly good texture, and quality, whereas the box marked '.Robert-: son,' is more tender, slightly . sour, and altogether does riot appear- to have stood the voyage as well as ,the other two.'; The chief point in the foregoing is thai the P.O. and F.F. butters were treated, with about 31ba salt, and 1£ per cent, of Preservitas, the Robertson sample being salted only, and enclosed in a Mountain Ash box.
