SWEETMAKING CORNER

CHOCOLATE TOFFEE. Break half a pound of plain chocolate into small pieces, pu it in a basin, and pour over it about half a teacupful of boiling water. Stir till chocolate has melted. Put half a pound of soft brown sugar into a saucepan with a piece of butter the size of an egg, and stir with a wooden spoon over the fire till the sugar has melted. Boil for about ten minutes, then stir in the melted chocolate, and boil again for ten minutes, stirring all the time. Have ready a slightly buttered tin, pour the chocolate into this and, when setting, mark into shapes with a knife.
