PERSIAN CANDY. Buy a quarter of a pound each of dates”, raisins, figs, prunes and mixed peel—the fruit must be stoned. Add a teacupful of any kind of shelled nuts and put all through the mincer or chop as finely as possible. Now work in half a pound of icing sugar and the white of one egg. Beat well on a board to a solid mass, then cut into squares with a sharp knife. Sprinkle icing sugar over each square and leave all night in a warm place to dry.
