SKIM MILK TESTS

DETERMINING THEIR ACCURACY. In the past there lias been a considerable amount of confusion with regard to the testing of skim milk from farm and factory separators. Separator salesmen have claimed , a very high efficiency for their machines on the basis of fat tests carried out by the Babcock and Gerber methods. An investigation at the Institute has shown that the results obtained by these two methods are very misleading. The only satisfactory method for use in the factory is the butyl alcohol modification of the Babcock method. It was shown that, even with the modification, results of sufficient accuracy could be obtained only with the use of a heated centrifuge.
