RASPBERRY CREAM FOR PARTIES.

For f four or five people, take enough sponge fingers to line a mould, one pound of raspberry jam, a half-pint cream, one ounce of gelatine, one eggwhite, one lemon, and sugar. Split the sponge fingers, paint the rounded side of each with egg-white, and stick them over the inside of the mould to forrii a complete lining. Thin the jam with, water, and rub it through a hair sieve. Melt the gelatine in a little warm water, and add the thinly peeled rind of he lemon. Stir over heat until nearly boiling, add sugar to taste, and strain into the jam, adding also the strained juice of the lemon. Beat the cream. When the jam mixture is on the
