To Preserve Lemon Juice.
You can preserve lemon juice as follows: —Squeeze the juice from some lemons, strain it through muslin, put into small bottles, pour over sufficient olive oil to cover the juice completely, and cork the bottles well. This will keep for some time, but when a bottle is opened the contents should be used soon. Another method is to put a pint of strained lemon juice into a basin with jib. of castor sugar. Stir, with - a silver spoon until the sugar is dissolved, then put it into small bottles, cork well, and tie bladder over the corks. Lemons will keep for nearly a year if put into earthen jars or crocks in layers with fine dry sand. There must be a layer of sand an inch deep at the bottom of the jar, on this place a row of lemons, stalks downwards, and not touching one another. Cover with sand to the depth of three inches then lay on more lemons. Repeat until the jar is full, the top layer being sand. Store in a cool place.
