(To the Editor.) Sir,—l would like to remind Mr. Kalaugher of the .findings of the Lowgarth tests. In the tests we find it took £2 17s to manufacture a 750-gallon vat of cheewi, and if we take the average fat tests of the two period's, 3.9 and 4.7 respectively, we find that the manufacturing costs per lb butter-fat are 2.34 d and 1.94 d, a difference of .40d in favour of the' high testing milk. Now perhaps Mr. Kalaugher would like to tell us how many < gallons of each milk he will require to meet his cost of manufacture at the average yields per 100 milk of 10.51 and 12.03, at 5d a pound for his cheese.—l am, etc., FAIRPLAY.
