’ ' , COCONUT ICE. (Sent by Dulcie Seed.) xrrgredients: Three heaped cups of sugar; two scant cups of water; 4oz. coconut. Method: Boil sugar and water together from 10 to 20 minutes, try by ru'bbing a little on a plate; if it whit-ens-stir in coconut quickly. Stand pan in a basin of cold water and beat until it thickens. Pour into buttered dish, brush the top with cochineal flavoured with essence.
