THE CHEESE INDUSTRY. (To the Editor.) Sir,—Kindly allow me space to reply to Mr. H. Johnson’s letter of February 24 on the above question. I will take the last part of his letter, “But first of all it is necessary to revise the system of pavment and pay farmers for what they 'deliver to the factories.” Quite right, but some of them would not receive any payment at all. One-third of the milk supply is useless for cheese making, one-third not much better, and one-third good; mix them, and you have a second grade raw article, and neither low-testing nor high-testing second grade milk will make the right cheese. Low-testing milk is not the solution to our troubles, as Mr. Johnson would have us believe. Given a high-grade raw article, our factories can do the rest without Canadian experts.
