SWEETMAKING CORNER

FRUIT CREAM. This is a delicious sweet and quite easy to make. Chap up, as finely as possible, some figs, a few glace cherries, dates, and a little candied peel. Put this mixture into a basin, and mix in a quarter of a pound of ground almonds and half a pound of icing sugar. Now beat in sufficient white of egg to make a stiff paste. Place the paste on a board, -i-nd knead it into a nice firm block, which neither .cracks nor sticks to the .ingers. Cut the block into cubes, and leave to dry. If the cream is to be kept, wrap each cube in greaseproof paper. Placed in a pretty box, fruit-cream makes a lovely present for a friend.
