CHEESE QUALITY.
(To The Editor.) Sir. —When some people make bad mistakes they immediately look around to find someone else to blame, ami, moreover, they have very short memories. If those “chcesemen” who at a meeting held in Hawera recently, ai which the Director of the Dairy Division and his officers were severely criticised, will call to mind a lecture on the above subject given by Air. Singleton, also at Hawera, they will remember that Air. Singleton absolutely condemned the manufacture of poor, quality cheese in order to get a high yield, and warned those concerned of the probable consequences. In doing this he eingled out South Taranaki for special mention. However, the question is not who is to blame, but what are the best steps to take to enable New Zealand to get back to quality first in the manufacture of cheese. To do so quickly and economically in my opinion the remedy is not far to seek. Firstly, let directors instruct managers to make quality their first consideration; in other words give managers a free hand. Next, introduce a national scheme of farm dairy instruction, and appoint as instructors experienced men who are qualified to give the greatest assistance both to farmers; and managers. Abolish standardisation, which will never be do any good to the industry. It is useless a few companies striving for quality; the move must be national if any good is to result. The proposal to ■ semi two factory managers to England is not likely to benefit the industry as a whole, and is, besides, a distinct reflection on Mr. Single-ton, who has just returned from a similar mission.
