HAUNTED HOUSE.

PHANTOM WOMAN APPEARS. The little picturesque Essex village Sf Benflee’t, within easy distance of Southend and London, is stirred by revelations made by respected members of the community concerning a ghost which is said to haunt Vicarage Hill, Benfleet, on the road from Southend. I have met and talked with sane men and women, who solemnly declare that they have seen the wraith of -a woman, clad in the garb of the mid-Victorian era, dash from the gtotihds of a stately house oh one side of the narrow road which runs Over the hill, and disappear through a hedge into the grounds of the BoyOe Hill Golf Club. Several declare that they have distinctly seen a wound in her throat. ; The apparition is said to have been on several occasions, and each persob who saw it preferred to keep the matter to him or herself to avoid being ridiculed by their fellows. ■ A respected and elderly lady In Bcnilcct said: “One evening another woman and I Were in the garden when we both distinctly saw a phantom woman in a sort of dirty white pass across the road in front of us and Vanish.” Were are many more people in’ Ben®KSUsoho are convinced of the pi*eqf something supernatural on the I bilL. STlffiir stories, more or less, cor- ! iuiiorate each the oll’.cr-- and all the I Barrators arc in full possession of their i poentai faculties, .

I HINTS ON CARVING. THF CHICKEN. First insert the fork in the breast (of the bird, and pass the knife backward between the thighs. This severs the skin, which would otherwise adhere tothe wings. The latter should be carved with a portion o the breas* attaelied. To do this, bring the knife down ctyse to the side bone, where it will be found the joint is readily severed. Next remove the wishbone, which lies at the head of the breastbone, thus giving free access to the breast of the bird on both sides. The legs are easily de- ] inched because the joints are practically (exposed. If one is anxious to get a i portion from the back, cut oil slijrp behind the joint of the leg. The latter |is easily divided by bringing the kpife forward' on either side of the backbdne THE TURKEY. The turkey is not a difficult bird to curve, the re: on being that the breast is fully exposed to the carver. The wishbone is concave and lies close to the breastbone. It is not necessary to cut o’ the wing, i the turkey hasoftej' to make two or three appearances. When necessary, though, the joints can bo removed as front a chicken. © • • • Many a j?rown woman would hang tip her stocking if she thought (here was , a chanvo of Santa Claus dropping a man into it.
