At some dairies belt-driven separators are employed in order that the milk may be separated with a minimum amount of labour being entailed. The separator belt or rope will last for a very long time if it receives an occasional dressing of oil suitable for the purpose. Belts which are not treated, in this way seldom last long; they soon rot or break. Cream cheese is sometimes made from I bin cream which has been thickened by the addition of rennet. The best quality cream cheeses are those made from fresh, thick, rich cream, which is simply hung up to drain in cloths of a suitable texture. When sufficients drained, the cream is slightly salted and made up in* ■to ch«ejo of the required size
