The meat committee of the Privy Council Committee for Scientific Industrial Research reports that experiments have been completed proving that if certain precautions are taken beef can bo frozen in sucli a way as to preserve completely the physical and chemical qualities of fresh meat. Experiments were carried out with small pieces of beef. Attempts to repeat them on a commercial scale so far have failed, owing to want of adequate apparatus. Experiments in regard to the growth of "black spot" on frozen meat show conclusively that "black spot" will grow and produce spores at 5 deg. centigrade below freezing point. Several other fungi develop fairly well %t freezing floint. —Aus.-N.Z.
