OPTIONAL CIVIC SERVICE

Wellington, May 10." Two further optional subjects have been added to the* Civil Service junior examination. These are elementary home science, not to be taken in addition to elementary physical measurements, and elementary dairy science. The requirements of the latter course will be a knowledge-of the constituents of milk, the cause of variations and defects in tha composition of milk, the physical and chemical properties of milk, the coagulation of milk, the composition of skimmed milk, separated milk, butter-milk and whey, methods" of determining the fat in milk, acidity, and the estuation ot acidity, sompling, the care of milk, influence of temperature on milk, pasteurising and sterilising of milk, objections to the use of chemical preservatives, the conveyance of milk, milk as a.medium for conveying'disease, the modes of: raising and separation of cream, the ripening of creams, the use of starters, ..the. process of churning, the composition' of butter, the common fin Its in butter, a very elementary knowledge of the general anatomy and nhysiology of the cow, with special reference to the parts concerned in nutrition and milk production, the care, management, and feeding of dairy cows and calves.
