INCREASING THE BUTTER SUPPLY.
Yesterday afternoon a most interesting demonstration was given in the Y.M.C.A. rooms by the Viking Butter Saver Company of Colombo Street, Christchurch, the main feature of wdiich was the making of 21b of butter out of : lib together with one pint of milk.! That such a result can be achieved was 1 fully demonstrated, and the finished j article was handed round in the form; of plentifully-buttered pikelets and biscuits, and the audience invited to sain-; pie it. This was done. There is an appreciable, but not at all unfavourable, difference in the butter so treated —it is something of the difference between a strong and a mild cheese, and i to many, the taste might be even more; agreeable than the original article. To all intents and purposes it is the same thing—w-ould go just as far, be as palatable, and serve the same purpose. Of course it would not be full strength, but as people generally do not depend upon butter for nourishment, that viewpoint flood not be regarded.
The modus operandi is simplicity itself, and the wonder is that the fact of milk and butter merging was not discovered earlier. The butter and milk, together with a little salt and colouring matter, arc placed in a receptacle almost exactly like a tin billycan, except for the fact that it has a domed lid with an aperture, through which the handle of an article called the plunger is placed. The plunger has a flat piece at one end, so perforated as to mafe it admirable for churning ami blending the ingredients. After the demonstrator hail agitated the plunger steadily for about five minutes, a double quantity of butter was shown, every drop of milk being absorbed. The butter was weighed and tested, and fully demonstrated that the company had substantiated their claims. Cream was also churned into butter in the space of a few minutes, and cream also whipped firm and stiff in an amazingly short space of time by means of the same churn and plunger. There will be demonstrations on Monday and Wednesday next at the Y.M.C.A. at 3 p.m. and 4 p.m. each day. .9 SAFEGUARDS THE HOME.
