Cheese and Macaroni Balls, loz macaroni, Hoz grated cheese, loz butter, loz flour, i pint milk, dripping, egg and breadcrumbs, salt, pepper, and cayenne. Wash the macaroni, then put into boiling salted water, drain and chop it. Melt the butter in a pan, add the flour gradually and rub to a smooth paste; add the milk gradually, stirring all the time. Cook two minutes, then add the macaroni, cheese, and flavouring, and allow to cool. Make into balls, brush over with egg, and roll in white breadcrumbs. Fry in deep fat. (Use the water in which the macaroni was boiled for soup.) Cheese Pudding. lloz grated cheese, ioz butter, { pint milk, loz breadcrumbs, 1 egg, salt, pepper, and cayenne. Melt the butter in a pan, add the milk and breadcrumbs. When cool, add beaten egg, cheese, and flavourings. Put in a greased pie-dish, and bake in a quiet oven for 20 minutes. Candied Peel. Cut into halves the peel of oranges or lemons, cover with cold water, and boil until soft. Take 2 breakfastcupfuls of white sugar and li cupfuls of cold water, and boil together until the sugar candies. Then throw in the peel and boil all together for half an hour. Drain and dry, then store in tins in a dark place. / Sandwich Pie. Pass any meat sandwiches through the mincing machine, add some gravy, cover with cold potatoes. Bake till brown and serve hot. Economical Apple Jelly. This is made from apple parings ! usually thrown away. Wash therh well, then cover with cold water,
and boil for 30 minutes. Strain through a muslin bag or sieve. Boil the liquor for ten minutes, add sugar to taste, and boil until it jellies on the side of the pan. Remove the scum as it rises. Pour into glasses and cover when cold. Potato Miroton. Boil or steam 12 fair-sized potatoes in their skins. Skin, mash, and season them with salt and pepper. Mince up a small onion, and fry it in two tablespoonfuls of cooking butter. When the onion is light brown, add in the mashed potatoes, stir all well, and put in a tablespoonful of mushroom ketchup or some similar flavouring, and two eggs well beaten. Sprinkle a buttered mould with breadcrumbs, and bake the mixture in it for half an hour. Vegetable Curry. Cut onions into thin slices, and fry a good brown in butter. Add breakfastcupful of milk in which a teaspoonful of curry has feeen mixed. Let all boil together for twenty minutes, stirring the whole time; then add the vegetables, previously parboiled, and let all simmer for an hour. Potatoes, peas, beans, carrots, and turnips may be used. Broad beans alone make a delicious curry.
