CAULIFLOWER AU GRATIN rJZIM and well wash a good white cauliflower , cook in salted water until just tender, but do not let it break; drain in a colander. Butter a deep enamel pie-dish, put in the cauliflower and cover with a thick layer of white sauce (melted butter), then strew with grated cheese. shake some seasoned breadcrumbs on top and place a few pieces of butter here and there. Bake till nicely browned and serve very hot. l
