South Africa and Fiji. These but. lers were examined by Government graders whose comments were made available today. The analysis shows that- whereas New Zealand butter usually has 16 per cent, moisture, fat content 82 and salt If. to 2, none of the overseas butters has moisture in excess of 15.90. The Danish figure is 13.80, Russian 13.10, Fat ranges from 81.45 (Fiji) to 54.80 (Danish). The Fijian salt percentages- ; are 2.25 and 2.85. The others range from 65 to 1.70. The Russian and South African specimens are described as having strong and unclean flavour and Danish as a very high colour, excess acidity, good body and texture.
