FRUIT DISHES AND HEALTHY DIET

SIMPLY-MADE DESSERTS MOONSHINE Required: A small tin of pineapple chunk, a pint of strawberry jelly, a pint of made custard with vanilla flavour, some ' dessicated coconut, a few glazed cherries and whipped cream. Empty the pineapple chunk into a large dish, make the jelly with the pineapple juice instead of water, pour this over the chunks, and allow to set over night. When set pour over a pint of custard made with either eggs or custard powder, then leave to cool. When required, whip the cream to a stiff troth and arrange on the top, sprinkling a little dessicated coconut here and there, also a few glazed cherries to add colour to the dish. This is a delicious sweet. Almond and Raisin Sponge One sponge cake ring, six ounces raisins, three ounces almonds, one tablespoontnl brandy, three eggs, one and a-half pints milk, one tablespooni'ul sugar, almond flavouring. Wash and stone the raisins and bleach the almonds (leaving out a few of each for decoration). Then put the rest through a mincer. Split the orange cake into halves, and spread with the minced almonds and raisins moistened with the brandy, then put together again. Boil the milk, and when just off the boil, add it to the beaten eggs. Stir in the sugar, add a few drops of flavouring, then strain. Put the sponge cake into a pyrex dish, pour in the custard and decorate with the remainder of the almonds and' raisins. Bake in a moderately hot oven for about 40 minutes, or until set, and serve cold.

Apple Dainty One pound of apples, cored butunpeeled, three ounces of sugar, the juice and "grated rind of one lemon, half a pint of hot water, a quarter of an ounce of gelatine, a little cochineal, one gill of cream, the white of one egg, a little vanilla essence, one ounce of castor sugar, two ounces of ratafias powdered. Cut the apples into pieces without peeling them, and put in a saucepan with the sugar, lemon juice and rind, and the hot water. Stew the apples until tender, then rub through a sieve. Melt the gelatine in four tablespoonfuls of warm water, strain it, and mix in with the apples. Colour the mixture with a little cochineal, and turn into a glass dish. Let it cool. Whip the cream and the egg to a stiff froth, sweeten with castor sugar, and add a little vinegar. Heap this over the apples and eggs alone, if no cream is used, and cover it thickly with the ratafias. Tropical Temptation ____ To make "Tropical Temptation," remove the centres from six apples and chop them. Add to tnis two cups of grated pineapple—the tinned kind will do—and half a cup of sugar. Fill the apple cups with this mixture and arrange them in a baking tin. Squeeze out the juice of one orange and one lemon, and to this add a cup o£ pineapple juice. Pour into the tin until it is half an inch deep. Bake the apples, basting frequently with the liquid, and as it boils away, add more. When done let them cool slightly. Whip the white of an egg till stiff, thicken with icing sugar, about half a cupful—and the same of shredded coconut. Put a large teaspoonful on top of each apple, and return to the oven to brown. HOME-MADE TOYS In these difficult times, when we are all striving to be economical, ideas tor home-made toys will be appreciated by parents. There is a fascination in making toys out of odds and ends, such as string, corks, matchboxes, and so on. A toy raft made of old cork, which floats beautifully can be made easily. Collect a number of corks of one size, and thread a piece of fairly stout wire through enough of them to make the width of the raft. Now thread other rows until you have the desired length. Having completed this, lay the rows neatly side by side, and join them together by pieces of thin string between the corks. A novel addition to the toy farm or doll's house are toy trees, which can be made from old cotton reels. Paint these in any bright colour —green, red, brown —with a band of black, to make them look like plan* tubs. Now fringe a piece of bright green paper and twist the bottom of it round a thin piece of stick about half an inch long. Fit this into the hole of the' cotton reel, painting the top of the reel brown, to look like earth.
