Dear Mrs. Housewife, Here is Xinas right on us again. I level in the work of preparation of the Xmas dainties, puudings and mince-meat. 1 throw myself right into the mixing of a good Xmas pudding. I wonder whether you know my own recipe for a good Xmas pudding? You take one pound each ot stoned Raisins, washed Currants, and Sultanas, jjlb, of Shreddo, half a pound of mixed Candied Peel, half a pound of Sugar, ;}lb .of Flour, -jib. of Breadcrumbs, '2ozs. Sweet Almonds (blanched and chopped) a teaspoonful of Baking Powder, a little nutmeg, the rind and juice of a lemon, a pinch of salt, -1 small beaten eggs, and enough milk to make it of right consistency. Put all they dry ingredients into a basin, add the eggs, and grated rind an the strained juice of the lemon. Mix it all thoroughly with the milk, put into greased basin, cover with the greased paper and steam for 6 hours. This will make two or three delicious, rich, yet perfectly digestible puddings. Next week, I will tell you my favourite way of making mincemeat. Till I meet you on the cooking bench, Your ever-ready friend, "SHREDDO." The all-ready Chopped Suet.
