THE CASEIN INDUSTRY.

ADDRESS BY MR PEDERSEN ON THE NEW BY-PRODUCT. Mr Pedersen, of the Government Agricultural Department, whose speciality is casein, delivered an address on Friday last at Waitara to representatives of several, northern dairy companies. In his address, Mr Pedersen first referred, says the Waitara correspondent of the “News,” to the fact that it was only of recent j ears that the manufacture of casein nad been put qn a commercial footing in the same respect as butter and cheese, but it had now fully established itself and was growing year by year owing tb the fact that the product was required now for so many purposes, and amidst daily new outlets of manufacture were being found. The United States and the Argentine produced some 8000 or 9000 tons yearly, whilst the Dan.sh output was some 2000 to 3000 t°ns. The Danish output varied considerably owing to two causes, one being the manufacture of skim milk cheese and tiie other to the sale of skim milk for iiousehold purposes, artificial foods and margarine. Unless the Danes receive equal to about per pound for butter fat for their skim milk they turned to the other method of manufacturing skim milk cheese. There did not appear to, him any possibility or over production of casein, as its uses were growing so fast. On the Continent manufacturers were finding that casein even at the big prices it had been bringing was warranted. The English manufacturers were more slow to adopt new methods, hence the fact of the bulk of the product being sold on the Continent. One important fact about casein was that if of good quality it did not deteriorate by keeping, and was as good in two or three years as when first made. Therefore, if such a thing as a slump occurred it could bo kept almost indefinitely until such time as the market recovered. From all he could gather there was no chance of such a slump occurring, but he only wanted to point out the fact that low prices could always be obviated. He had been asked the question recently why casein had dropped in value to such a low price. This was accountable for by the fact that a very poor quality had - been made, the natural consequence being that a poor price was obtained. With the method in vogue to-day there was no necessity to make anything hut a first-class article, that is with,■ordinary intelligence being brought to hour hi its manufacture. New Zealand milk was particularly well adapted for the manufacture of casein, being rich in quality, and so far as he could see after investigation in Denmark, we could produce casein quite equal *o the best made elsewhere. As to,feeding qualities of the resultant whey he could not speak as an experienced f irmer, hut evidently it had a. good value when the Danes were able, to export yearly from £6,000,000 to, -£7,000.000 worth of bacon. He would;|(dvise caution in the expenditure ;tpf' large amounts for at least the present year in the erection of drying plants, and thought the farmers would be wise in simply installing the plants at Say one of their factories or creameries, and satisfy themselves of its benefits before launching out. These plants simply made the green casein, which mas further dealt with at thh Aramoho drying station. Midhirst had just installed such a plant, and were working under the conditions stated.

As a result of the above meeting, concludes the correspondent, several factories in the district are taking.immediate steps to hoia meeting of suppliers with a view to placing the additional information before them with a view to ascertaining whether the directors will be authorised to take the necessary steps to erect precipitation plants this season so that a trial can be made at a minimum of expmse, and there seems every probability that in some cases six weeks will see green casein railed on to Aramoho for manufacture.
