PASTEURIZED MILK
Sir,—l note some discussion in’ your paper about “pasteurized” milk and raw milk. Might I, as a visitor to your town and one who has studied this question, point out that the “Science Review” of July 1944 Isays that pasteurized milk exposed to sunlight loses 42 per cent, of vitamins in the first two hours of exposure and 70 per cent, in three hours. This fact is well known in America, where—in places such as California—milk is delivered in paper board opaque containers to prevent such loss. Recent American research also discloses that only B. Coli, the tuberculosis bacteria, is rendered harmless in pasteurized milk. B. Coryne and others, the cause of diphtheria and many other diseases, are not destroyed. The Research Committee which spent three years on this research, finally decided that all diseases acquired from milk were caused by dirt at some stage of operations in producing and vending of raw milk. The only comment I wish to make is that the healthiest nations in the world are those who are fortunate enough to have plentiful supplies of raw milk. New Zealand can be included in this lot. SCIENCE.
