CHANGE FROM BUTTER TO CHEESE
AUSTRALIAN PRODUCERS (P.A.) AUCKLAND, October 22. “Australia has been giving the change-over from butter to cheese considerable attention and in Queensland, Victoria and South Australia the switclx-over is extensive,” said Major J. Russell King, of Sydney, who has come to Auckland to preside at the annual meeting of Empire Dairies. He said Britain had promised to take annually up to 40,000 tons of Australian cheese, but it was doubtful if that quantity could be sent this year. Australian dairymen were receiving full value at the price offered by the Imperial Government, which was 7/3 per cwt more than the previous contract price. The dry season in the two main producing states was seriously curtailing production this season. One of the main questions after the war would be the competition between butter and margarine, said Major King. The Australian Control Committee was now establishing an advertising fund by a levy on all export butter to get butter back to pre-wax - consumption in Britain and other world markets. The committee aimed at raising £1,250,000 and half of this amount was already in hand. The Commonwealth had increased its cold storage capacity to hold three months’ supply at the peak of production.
