JELLY SLICES AND CREAM OR CUSTARD Cream 3oz butter or good margarine well, add 2oz castor sugar and beat well. Beat 2 eggs well and add gradually to butter mixture. Sift 3oz plain flour with 1 level teaspoon baking powder and add gently to butter mixture with a little vanilla essence. Bake in an oblong cake tin, well greased and lightly floured, in a moderate oven for 15 minutes. Turn out and cut through the middle. Spread with a tart jam and join together. In the meantime, make 1 packet red jelly and flavour with a little rum or sherry; allow it to almost set. Place the cake back in the tin in which it was cooked and pour over jelly. Cover top with chopped almonds, allow to set, then cut into slices. Serve' with whipped cream or boiled custard. Sliced banana may be placed on top of cake before adding jelly.
